Sometimes the label is applied incorrectly to any dish including traditional Cajun ingredients such as cayenne pepper, or merely as a slogan, as in McDonalds' "Spicy Cajun McChicken". Like the classic French mirepoix, the Louisiana trinity starts off many dishes, but is distinct to the Southern United States. Cajun gumbo uses a thickening roux, while Creole gumbo starts with a soup-like tomato base. It was only a couple of paragraphs, but I appreciated the plain English. (It's the little things that make me happy.) The recipes, as expected, are voluminous and accommodate a range of skill sets.

(no kidding) All the recipes are very informative and consice. I also pulled up the menu online and everything I am reading is Cajun, Cajun, Cajun. S. state of Louisiana, consisting of the descendants of Acadian exiles ( French -speakers from Acadia in what are now The Maritimes of Eastern Canada). In the mid-1700s in Acadia/Nova Scotia, when the French colonial army drafted Acadians, they weakened the Acadians' identity to the British as "French Neutrals," and prompted the British to try to expel all Acadians from the region.
